The researchers analyzed diet questionnaires from the Nurses' Health Study collected between 1984 and 2016, following more than 47,000 women who were between 70 and 93 by 2016. Two limits belong in any honest reading. The study population was mostly white, well-educated health professionals, which limits generalizability. And this is an observational cohort study: the associations are strong and adjusted for many confounders, but they show association, not proof of cause and effect. The practical message that survives: the quality of the carbohydrate, not the avoidance of carbohydrate, is what the evidence points to.
Here is the measured complication: the healthy-aging carbohydrate list and the stone diet's oxalate list overlap in both directions. Whole grains — rice, oats, and the lower-bran cereals — are low-oxalate and land on both lists. Legumes — beans, lentils, chickpeas — measure low oxalate and land on both lists. The quality message and the measured message are the same message: choose the whole, unrefined version — and portion the few that carry oxalate.
