Dark Chocolate and Kidney Stones: The Numbers Behind the Health-Food Halo

Per square: a typical 1 oz (28 g) serving of dark chocolate carries roughly 45-70 mg of oxalate, which places it in the moderate-to-high band for a food eaten as a treat. The surprise: when the researchers fed a 68 g bar (232 mg total oxalate) to 14 volunteers, only about 1.8 percent of that oxalate appeared in urine over the following six hours — the fat and fiber in chocolate appear to blunt absorption substantially.

Why the Absorption Number Is Not a Green Light

A 1.8 percent bioavailability figure is real and worth knowing — it says the oxalate in a chocolate bar is less bioavailable than the oxalate in spinach tea. But it is a single feeding study in 14 people, not a license: absorption varies with the meal it is eaten in, the individual's gut chemistry, and whether calcium is present to bind oxalate in the gut. And chocolate brings its own considerations beyond oxalate — a 100 g bar of dark chocolate delivers potassium and phosphorus at levels that matter for anyone with reduced kidney function, and processed candy products may contain phosphate additives that absorb almost completely.

The form matters as much as the food. Cocoa powder concentrates what the bean carries — that is why two tablespoons of plain cocoa can rival a chocolate square — while milk chocolate dilutes cocoa with dairy and sugar, cutting oxalate per serving substantially. Dutch processing (alkalization) also changes the chemistry. The measured ranking: cocoa powder highest, dark chocolate in the middle, milk chocolate lowest per serving.
